Simple Vanilla Cake For Aspiring Bakers!

        My interest in baking stem from watching lots of videos on tv and YouTube. When my hubby bought me an oven, plus an electric mixer that was given to me by my dear friend Minnie as a wedding gift I couldn't wait but try doing it on my own!! And I finally did it!!


This recipe makes a single layer cake. Let's Start. 

Ingredients

  1 1/2 cup(s)  Cake Flour
  1 1/2 teaspoon(s) Baking Powder
  1/4 teaspoon(s) Salt
  1/2 cup(s) (1 stick) Unsalted Butter, softened
  1 cup(s) Sugar
  2 large Eggs
  1/2 teaspoon(s) Vanilla Extract
  1/2 cup(s) Milk

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a wax paper.
  • Sift the cake flour, baking powder, and salt into a mixing bowl.
  • Beat the butter, vanilla extract and sugar using an electric mixer set to low speed, until the mixture resembles coarse sand. Then add the eggs one at a time and beat in for 30 seconds or until just combined. Gradually add the sifted dry ingredients in three batches, alternating with the milk. Increase the speed to high and beat for 1-2 minutes or until the mixture is thick and all the ingredients is incorporated. .
  • Pour into the prepared pan and bake until a wooden skewer inserted in the center comes out clean — 30 to 35 minutes.
  •  Remove from oven and set aside for 10 minutes.


Tadaa!!!


So light and fluffy! This cake goes so well with coffee.

SHOULD I QUIT MY JOB?




This is a difficult question. Most of us are having a gazillion thoughts whether we stay or not. But one thing for sure is true, it's not fun anymore. Here are some tips to help you decide.

Check for Signs.

1. IT'S HARD TO KEEP UP
When I am being asked how's my job, my usual response is 'I love what I'm doing'; however, that doesn't mean everything is doing great on any given day.  If you find yourself in a situation wherein you need to drag yourself everyday just to go to work, then it's time to leave. Though you can do something to change this situation like move to another department or ask for different task but if these efforts failed then might as well pack your bags and go.

2. IT'S NOT REWARDING
Work is not all about money. A job should help you earn more knowledge, skills that would benefit you in gaining  personal and career advancement. If you feel that you don't want your boss's job, you need to think hard about what's next. Chances are you will always be an underperformer and your co-workers will soon pass you.

3. SOMETHING BETTER COMES ALONG
As they say 'The grass is greener on the other side'.  Most of us can spot opportunity after it has passed, if new and greater opportunities come in your way you should take it.

Before making a final decision make sure you know the risks. You can try to seek help, but if all else fails, then consider change. Sometimes leaving really is the best option.
